A rare and special find for a fresh catch and even a rarer find on a restaurant menu is a Hog Snapper!

 

They are plentiful in the Florida Keys but can be fished as far north as North Carolina. Its name is derived from the male’s head resembling a pig’s snout. The Hog Snapper resides in coastal waters bottom feeding primarily on mollusks, crabs and sea urchins which yields the sweetest meat.  Hog Snappers are a high quality fish regarded by many as the best tasting of all the reef fish.

 

And it’s a real treat to offer it for as an addition for dinner service! This one is definitely while supplies last!
